A Great Summer Dessert

I looked at my precious pint of just-picked wild blueberries. Decision time: what’s the best way to enjoy them?

I didn’t want to just eat them plain because they wouldn’t go very far. But I didn’t want to bake them into a dessert, adding sugar or anything else unhealthy. And I didn’t want to freeze them because they’re so extra-good when you eat them fresh.

So I came up with a perfect solution — Summer Delight Parfait.

What’s so perfect about it?

It’s delicious!
It’s healthy — made from whole foods with no added sugar, salt, or oil
It makes your supply of blueberries stretch far
It’s super-quick to make
It’s so cute :-)
It’s flexible — you could use any variety of fruits and berries

Recipe:

First make the Strawberry Cream:

1 box Mori-Nu Silken tofu
2 Medjool dates, or 4-6 smaller dates (to taste)
2 Tablespoons raw cashews
1/2 teaspoon vanilla extract
1 cup fresh or frozen strawberries

Blend all ingredients in a good blender until creamy.

Then assemble the parfait:

Layer the strawberry cream in a small, pretty glass with a variety of fresh fruits and/or berries.
Top with a fresh, colorful berry and mint leaf, to make it irresistible.

Have fun! Use any berries or fruit you have available. Impress your guests. They’ll think you worked hard to put this delightful parfait together.

    Me too. I have also sent it off to brother in law and sis in law to try..Both have lots of medical issues and like deserts. This should be great for them. Great for anyone really. Diane

    My new favorite is making “ice cream” with my Yonanas machine. You use frozen bananas and any other frozen fruit you want. It really does come out like soft serve ice cream, but it’s 100% fruit. While you can do similar things in a Vitamix, it’s not as easy to get out and you have to push down the fruit with the tamper.

      The thing I like about the parfait is that you end up tasting the fresh berries and fruit in a different way than when they are frozen and taste more like ice cream. Both delish — just different.

    Another home run! Your enthusiasm and energy are contagious. I especially enjoyed your reaction when tasting the parfait, as it made me smile and want to gather the ingredients. I really liked how you used so many different fruits, even frozen, and pointed out the numerous variations so it can be made any time of the year. Thank you for improving the quality of so many lives in so many ways.
